Chai is in our roots
In our home, the ritual of morning and evening chai is a routine. We grew up drinking chai prepared the traditional way - from scratch - every day as a family since we were kids. We would also often prepare chai for guests who came to our home, making it a symbol of community and conversation. The preparation of chai is a connection to our cultural heritage. Its warm, invigorating aroma instantly brings us back to our Indian roots and the heart of our family kitchen. It’s a stovetop process that blends water, milk, black tea powder, and a mix of spices that shift with the seasons and personal taste. Whether it is the bold heat of ginger in winter or the soft warmth of cardamom in the summer, every cup reflects care, culture, and comfort. Our entire family holds great appreciation for chai, and for Rashmi (mom) and Sugeeth (son) in particular, chai has always been a significant hobby. From the time Sugeeth was in elementary school, he and Rashmi would spend a great amount of time discussing chai, creating new blends, and preparing new recipes for our family’s enjoyment. All four of us in the family (Rashmi, Sathish (dad), Shruti (daughter) and Sugeeth) have taste-tested gallons of chai over the years perfecting the recipes and blends. As Shruti and Sugeeth are now young adults and ventured out into the world of opportunities to create a life for themselves, we decided to start a chai company as a family with our custom blend recipes to keep us all rooted and treasure the fond memories, laughter and fun we had over the years. Chai isn’t just a drink for us, it’s a daily celebration of tradition, culture, and joy!
The Tradition Continues
Our brand name was chosen to reflect our cultural background and the rich, bold flavors of our chai. Rashmi and Sathish grew up in Bengaluru, Karnataka, India, and our company, Jōg Chai, is named after the powerful Jog Falls. Jog Falls, formed by the Sharavathi river nestled in the Western Ghats of Karnataka, is one of India’s most majestic natural wonders. It is the tallest waterfall in Karnataka and the second highest plunge waterfall in India. Jog Falls is composed of 4 cascades: Raja, Roarer, Rocket and Rani. The names of our chai mix bundles – Raja and Rani – are inspired from these. The signature bundle - The Royal Collection - is inspired from the majestic and royal waterfall that Jog is! We are excited to share our chai with you and hope you experience the joy it brings with every sip!
From Farm to Cup
Plucking
The leaves are plucked in strict 5 day-cycles, following the fine plucking standard of two leaves and a bud.
Withering
The plucked leaves are transported to the troughs and evenly spread out for the withering process, during which their moisture content is reduced by up to 30%.
CTC
The withered tea leaves undergo the Crush, Tear, Curl (CTC) process, where the CTC machine rolls and shapes them into uniform granules.
Fermentation / Oxidation
After CTC, the granules are moved to the fermentation area for oxidation using the floor-fermentation method. During this stage, natural chemical transformations take place, enhancing the tea's aroma, flavor, and color. The tea granules are allowed to ferment for about two hours.
Drying
The fermented tea granules are then dried in a VFBD (Vibro Fluid Bed Dryer). During this stage, the leaves develop their characteristic dark, black appearance—referred to as the "dryer mouth."
Adding spices and packing
Packing in airtight sealed pouches preserves the fresh aromas of the tea powder and the spices
